Two Week Macro- Friendly Meal Plan

It’s a situation out there! It is so crazy to me that I wasn’t even thinking about the coronavirus until two days ago, and now it is affecting almost everything in life! The only thing we still have going on that is a “normal” activity is church, and, even then, it is definitely scaled back.

Right now, the grocery stores are out of food. I have plenty to last for a while, but once it dies down I want to do a grocery trip for things that will last us for a while. So, without further ado, the meals I have planned for the next couple weeks (once I am able to get to the store, that is!).

Chicken Breast

  1. Creamy Chicken Noodle Soup
    • Ingredients:
      • 14 g butter (1 tablespoon)
      • 240 g diced carrots (~ 1 and 1/2 cups
      • 240 g diced celery (~ 1 cup)
      • 240 g diced onion (1 onion)
      • 1 tsp minced garlic
      • 30 g all purpose flour (1/4 cup)
      • 1/2 tsp dried oregano
      • 1/2 tsp salt
      • 1 tsp dried thyme
      • 9 tsp chicken stock granules + 9 cups of water (or 9 cups of chicken stock. May adjust macros)
      • 680 g cooked and shredded chicken breast (~ 24 ounces, measured using Costco rotisserie chicken breast)
      • 224 g dried noodles of choice (I chose rotini) (3 cups)
      • 240 ml fat free half and half (1 cup)
  2. White Chicken Chili
    • Ingredients:
      • 3 Chicken Breast (can be frozen still) (My chicken weighed 833 g)
      • 1 onion, diced (200 g)
      • 3 15.5 oz cans White Chili Beans (1235g- drain them if using great northern white beans. If using seasoned chili beans, there is no need to drain)
      • 1 4 oz can Diced Green Chile (105 g)
      • 3 tsp Chicken Stock Granules + 3 cups of water (or 3 cups of chicken stock)
      • 1 tsp minced garlic
      • 2 tsp cumin
      • 2 tsp oregano
      • 1/2- 1 1/2 tsp cayenne pepper (we do 1/2 tsp to keep it from being too spicy for the kids. Choose how much you would like depending on your spice preference)
      • Optional:
        • Tortilla Chips
        • Sour Cream
        • Shredded Cheese
        • Cilantro
        • Green Onion
        • Avocado
        • Hot Sauce or Salsa
  3. Pulled Chicken
    • Ingredients:
      • 2 lbs raw chicken breast, frozen (if using thawed chicken, allow for a shorter cook time)
      • 2 tsp minced garlic
      • 1 tsp chili powder
      • 1 tsp paprika
      • 1/2 tsp salt
      • 1/4 tsp pepper
      • 1 tsp liquid smoke
      • 1/4 cup apple cider vinegar
      • 200 g Stubb’s barbecue sauce , or more or less to taste
      • Options for Serving:
        • On hamburger buns
        • On Salad
        • Crunchwraps
        • Pizza
  4. Creamy Verde Enchiladas
    • Ingredients:
      • 2 cans Cream of chicken soup, healthy request (10.5 oz)
      • 1 Cup Non fat Greek Yogurt (221 g)
      • 1 Jar Salsa verde (we like medium heat) 16 oz
      • 16 oz Shredded chicken
      • 1 Tbsp Taco seasoning
      • 4 Joseph’s Lavash Wraps, with each wrap cut into four rectangles
      • 5 Oz Shredded cheese
      • Options for serving: 
        • Frozen veggies
        • Side Salad
        • Refried Beans
        • Rice
        • Cauliflower Rice

Pork Sirloin Tip Roast (or Pork Tenderloin)

  1. Lillie Eats and Tells Carnitas
    • Ingredients:
      • 23 pounds pork tenderloin (I use pork sirloin tip roast)
      • Season Salt
      • 16 oz jar herdez or some green salsa
      • 8 cloves of garlic
      • 1 medium white onion diced
      • Optional for Serving:
        • Tortillas or lavash wraps
        • Salad
        • Tomatoes
        • Refried Beans
        • Rice
        • Any other taco toppings your family enjoys!
  2. Pork Mississippi Roast
    • Ingredients:
      • 1220 g Pork Sirloin Tip Roast (I purchase mine from Costco)
      • 1 Au Jus Seasoning Packet
      • 1 Ranch Dressing Mix Seasoning Packet
      • 100 g Deli Slice Peperoncini
      • 1/2 cup Peperoncini Juice
      • 2 cups water
      • Options for Serving:
        • Mashed potatoes/ cauliflower and frozen veggies
        • On hamburger buns with cheese (similar to a french dip)
  3. Asian Pork Roast with Ginger Glaze
    • Ingredients
      • RUB:
      • 1 tablespoon brown sugar
      • 2 teaspoons salt
      • 1/2 teaspoon powdered ginger
      • 1/2 teaspoon cinnamon
      • 1 teaspoon garlic powder
      • 1/2 teaspoon powdered cloves
      • 1/4 teaspoon black pepper
      • 1/2 teaspoon crushed red pepper
      • 23 pound pork sirloin roast (or tenderloin)
      • GLAZE:
        • ½ cup brown sugar
        • 1 tablespoon cornstarch
        • ¼ cup rice vinegar (or white)
        • ½ cup cold water
        • 2 tablespoons soy sauce
        • 1 teaspoon fresh ginger (will likely use dried ginger)
        • Optional for Serving:
          • Rice/ Cauliflower Rice
          • Frozen/Fresh Veggies

Ground Beef and/or Ground Turkey

  1. Macro Friendly Taco Skillet
    • Ingredients
      • 1 lb 96/4 lean ground beef (or ground beef or turkey of choice. Macros may change!)
      • 1 medium onion, diced (~200 g)
      • 2 T Taco seasoning, or more to taste ( I used 2.5 T)
      • 10 ounces rice cauliflower
      • 1 can Rotel, original or mild
      • 56 g shredded cheddar cheese, or cheese of choice (2 ounces)
      • Optional for serving:
        • Tortillas or lavash bread of choice
        • salad
        • refried beans
        • Rice/additional cauliflower rice
  2. Philly Joes
      • 1 lb 91/9 lean ground beef (or whatever your preference of ground beef or turkey. Keep in mind the macros may change!)
      • 3 cups frozen bell peppers and onions (340 g)
      • 4 light laughing cow wedges ( or 2 ounces of 1/3 less fat cream cheese. Macros will be slightly different)
      • 1/2 tsp salt, or more, to taste (I used garlic salt)
      • 1/2 tsp black pepper
      • 1/2 tsp chili powder
      • 1/2 tsp paprika
      • 1 tsp Italian seasoning
      • hamburger buns, to serve
      • thin provolone cheese slices, to serve
  3. Skillet Shepherd’s Pie
    • Ingredients:
        • 1.5 lb lean ground beef (macros for 91/9)
        • 1 medium onion, diced (245 g)
        • 3 stocks celery, diced (100 g)
        • 1 tsp garlic salt
        • 1 tsp dried thyme
        • 1/2 tsp dried rosemary
        • 1/2 tsp pepper
        • 2 Tbsp flour
        • 5 tsp tomato paste
        • 3 tsp Worcestershire Sauce
        • 1 tsp beef stock granules + 1 cup of water (or 1 cup of beef stock)
        • 12 ounce frozen peas and carrots
      • Mashed Potatoes
        • 3 potatoes, peeled and scrubbed clean (784 g)
        • 1 tsp chicken stock granules + 1 cup of water (start with 3/4 cup of water, increase until desired consistency is reached) (or 1 cup of chicken stock)
        • 2 tbsp light sour cream
        • garlic salt, to taste
        • paprika, to taste
        • dried parsely, to taste
