I just love grilling season! Especially since we live in central California where temperatures are HOT through most of the spring/summer/fall (insert eye roll), we take almost any chance we can to grill outside and keep the heat out of our kitchen. Chicken is a staple for macro counters. Low in fat, high in protein, so we grill chicken at least once a week. The key to a flavorful, moist chicken breast is marinading it before hand. But, I’ll admit, I’m still totally confused about how to calculate the marinade into macros. So, I’ve come up with a go-to chicken marinade that you don’t have to log, because the calories in it are so minimal since it contains no oil. We love the basil flavor it adds to the chicken, and it is great on top of salads, pastas, or even just eaten plain. Plus, it takes only a couple of minutes to throw together and requires only 4 ingredients!
Basil Lemon Chicken Marinade
Ingredients
- 10 g fresh basil leaves
- 20 g fresh lemon juice
- 1 tsp garlic (5 g)
- 1/2 cup water + 1/2 tsp chicken bouillon granules (or 1/2 cup chicken stock)
Instructions
- Place all ingredients into a blender and blend until well combined and the basil leaves are mostly chopped up. Add into an air tight container or bag with up to 2 pounds of chicken breast. Allow the chicken breasts to marinade for at least 4 hours and up to overnight. The longer they marinade, the more flavor they absorb!
