Loaded Red Mashed Potatoes

Mashed red potatoes with bacon, cheese, and green onion. Still so satisfying, but easier to fit in your macros!

Ingredients

  • 2 lbs Red poatotes, scrubbed clean and then cubed (you can peel your potatoes if you desire, but I left the peels on mine)
  • 2 tablespoons light sour cream (30 g)
  • 3/4-1 c chicken stock (or 1 tsp of chicken granules and 1 cup of water) (start with 3/4 cup and increase to 1 cup, if desired)
  • 2 wedges light laughing cow cheese
  • 50 g bacon, cooked crisp and crumbled
  • 56 g sliced green onions, or to taste
  • 28 g sharp cheddar cheese
  • garlic salt, to taste

Instructions

  • Place chopped red potatoes in a pot and cover them with water. Bring water
    to a boil and boil potatoes until they break apart easily with a fork. Drain
    liquid from the pot.
  • Start with 3/4 cup of chicken stock and 2 tablespoons of light sour cream.
    Mash them with a potato masher until desired consistency is reached. Add
    additional chicken stock, as necessary.
  • Stir in 2 wedges of the laughing cow cheese until it has melted into the potatoes. Then stir in bacon, cheddar cheese, and green onions. Season to taste with garlic salt. Serve and enjoy!
