Soft Baked Chocolate Banana Protein Bars
Soft, chewy, chocolate bars that are so simple to make and have a great boost of protein, too!

- 3 ripe bananas, mashed (about 350 g)
- 1 tbsp honey (21 g)
- 2 tsp cocoa powder (4 g)
- 2 scoops chocolate protein powder (64 g)
- 2 cups dry oatmeal (160 g)
- 4 tbsp chocolate chips, divided (60 g)
- 1 tbsp peanut butter (16g)
Pre-heat the oven to 350. Spray an 8x8 pan with non-stick spray.
Combine mashed bananas, honey, cocoa powder, protein powder, and dry oatmeal until mixed well. Fold in 3 tbsp of chocolate chips. Pour batter into sprayed 8X8 pan and bake for about 20 minutes, or until edges are beginning to brown and center is set.
After the bars are taken out of the oven, melt the remaining tablespoon of chocolate chips with the tablespoon of peanut butter in a microwave safe bowl. About 30 seconds in the microwave was enough for me. Stir peanut butter and chocolate chips together until completely smooth. Place chocolate mixture into a sandwich size plastic bag. Carefully clip a very small piece of the bottom of the plastic bag. Drizzle the bars with the chocolate by squeezing the chocolate through the hole in the sandwich bag.
Allow bars to cool completely, cut into 10 bars, and enjoy!
