I have always been a big potato fan! Seriously, I was the kid at the restaurant who, when given a choice of two sides, would choose two different preparations of potatoes. HA! Thank goodness I’ve learned a bit more about balanced eating since then! Before I learned more about balanced eating, though, I believed the media and other fitness influencers who said that white potatoes were “bad” for you, and so I stopped eating them. Macro counting showed me that potatoes can be a part of a balanced diet, and I’m so thankful they’re back in my life!
Anytime you go to a restaurant or find a recipe that has the word “loaded” in it, you can pretty much bet on it being a fat bomb. However, I love loaded potatoes, and so does my husband, so I figured out a way to make them delicious but more macro friendly. The secret to keeping them indulgent is mixing in a couple wedges of light laughing cow cheese. It adds a creamy element without a ton of excess fat! Macros for 150 g of potatoes are rounded to 5f/24c/5p, so you can enjoy a bigger serving if you’re a potato lover like we are.
