Double Chocolate Banana Bread
Free of refined sugar, refined flour, oil, butter, and eggs!

- 3 bananas, mashed (about 305 g)
- 1 1/3 cup oats, ground or blended until a flour like texture (107 g)
- 2/3 cup chocolate or vanilla whey protein. I used PE Science Cake Pop. (52 g)
- 1/2 cup unsweetened applesauce (140 g)
- 1 tsp baking soda
- 2 tbsp cocoa powder (10 g)
- 1/2 cup chocolate chips (85 g)
Preheat your oven to 350 degrees. Spray a 10 inch loaf pan or similar size well with cooking spray.
Mix all ingredients (except the chocolate chips) together until well combined. Fold in the chocolate chips.
Pour into sprayed loaf pan and bake in the preheated oven for 30 minutes, or until a toothpick inserted into the middle comes out mostly clean with a few crumbs.
Let it cool completely in the pan, slice, and enjoy!

To make into muffins, spray a muffin pan with cooking spray and fill tins almost to the top with batter, until evenly distributed. Bake at 350 degrees for 14-15 minutes, or until a toothpick inserted into the middle comes out mostly clean with just a few moist crumbs. Makes 12 muffins.
