Double Chocolate Banana Bread

Free of refined sugar, refined flour, oil, butter, and eggs!

Ingredients

  • 3 bananas, mashed (about 305 g)
  • 1 1/3 cup oats, ground or blended until a flour like texture (107 g)
  • 2/3 cup chocolate or vanilla whey protein. I used PE Science Cake Pop. (52 g)
  • 1/2 cup unsweetened applesauce (140 g)
  • 1 tsp baking soda
  • 2 tbsp cocoa powder (10 g)
  • 1/2 cup chocolate chips (85 g)

Instructions

  • Preheat your oven to 350 degrees. Spray a 10 inch loaf pan or similar size well with cooking spray.
  • Mix all ingredients (except the chocolate chips) together until well combined. Fold in the chocolate chips.
  • Pour into sprayed loaf pan and bake in the preheated oven for 30 minutes, or until a toothpick inserted into the middle comes out mostly clean with a few crumbs.
  • Let it cool completely in the pan, slice, and enjoy!

Notes

If you use a smaller or larger baking pan, your baking times will vary. 
To make into muffins, spray a muffin pan with cooking spray and fill tins almost to the top with batter, until evenly distributed. Bake at 350 degrees for 14-15 minutes, or until a toothpick inserted into the middle comes out mostly clean with just a few moist crumbs. Makes 12 muffins.
